Chia Coconut Pudding


Think about waking up with a refreshing, healthy and guilt-free breakfast already made! This is easy and a great way to start the day or as a mid-day snack.

Ingredients:

1/2 cup of unsweetened coconut or almond milk*

1/2 cup of plain coconut yogurt (or raw milk homemade yogurt)

1/4 tsp of stevia (or 1 tsp of pure maple syrup or raw honey)

1 tsp of pure vanilla extract

pinch of kosher salt

1/4 cup of chia seeds

1/4 c up of unsweetened coconut flakes

1/2 cup of organic strawberries

1/4 cup of sliced, toasted almonds (optional)

*for a thicker consistency you may use light coconut cream

Directions

In a medium bowl, whisk milk, yogurt, sweetener, vanilla and salt. Add and mix in chia seeds and coconut flakes. Let this mixture stand for 30 minutes (you may cover with a kitchen towel). Whisk again, transfer the pudding to individual glass bowls and let it sit in the refrigerator overnight.

The next day, top with berries (or blend them with 1/4 tsp of stevia, raw honey or maple syrup) and add some sliced almonds.
