Super Healthy Banana-Chia Muffins (Gluten and Dairy free)

This is a recipe for a delicious, low carb and healthy muffin that can be part of a morning breakfast or snack : each muffin has a proportion of 15-36-49 of protein, carbs and healthy fat. It will promote satiety and energy for the day. Also, these muffins are gluten and dairy-free.

You'll need:

1 cup of coconut flour (sifted)

1/2 tsp of sea salt

1 tsp of baking soda

1/2 cup of raw honey

1 cup of coconut milk

6 organic eggs

4 tbsp of coconut oil (melted)

3-4 tsp of vanilla extract

4 tbsp of Chia seeds

1 banana (mashed)

1/2 cup of cranberries, goji berries or raisins


Preheat oven to 350°F. Mix dry ingredients in a bowl. In a separate bowl, whisk honey, coconut milk, eggs, coconut oil and vanilla. Gently stir this wet mixture into the dry mixture. Add the chia seeds and mix. Fold in the banana and the dried berries and pour batter into greased or lined muffin tins, filling 3/4 full. Bake for about 25 minutes or until the muffins begin to turn brown and are cooked through. Remove from tins and allow to cool. Enjoy!
